L’Aubergine est une plante dicotylédone de la famille des Solanaceae, cultivée pour son légume-fruit. Le terme aubergine désigne la plante et le fruit. Elle est originaire d'Asie, où elle fut cultivée à la Préhistoire, et constitue avec les aubergines africaines S. aethiopicum L. et S. macrocarpon L. les trois espèces d'aubergines cultivées. À la différence de la pomme de terre et de la tomate, ces solanacées de l'Ancien Monde suivent un parcours de mondialisation qui leur est propre. L'aubergine est riche en composés phénoliques et alcaloïdes antioxydants aux effets favorables sur le syndrome métabolique, elle est l'objet de nombreuses publications scientifiques.
