Le seigle est une plante annuelle du genre Secale appartenant à la famille des Poaceae (graminées) et cultivée comme céréale ou comme fourrage. Elle fait partie des céréales à paille. C'est une céréale rustique adaptée aux terres pauvres et froides. Sa culture reste importante dans l'Est de l'Europe, mais est devenue marginale ailleurs. Le genre Secale comprend de nombreuses espèces originaires d'Asie centrale.
